For us here in Greece, mid-July was CRAZY HOT!
Cooking over a hot stove was out of the question.
So, we resorted to salads…lots and lots of salads!
We were aiming for light, healthy and colorful, and I think we found our winner.
Our fresh fig salad was all this and more.
It’s packed with so much goodness, that it will fill your tummy and keep you satisfied for longer.
The secret to a salad that keeps you feeling full is to find the perfect balance of fiber, protein and fat.
This amazing fresh fig salad has all the ingredients for absolute success!
Delicious leafy greens packed with fiber.
“Mastelo” cow or goat cheese, that is perfect for grilling (you can, also, use haloumi cheese which has a high melting point).
Siglino, a traditional smoked ham that is so tasty, it might not even make it to the salad bowl (you can, also, use smoked bacon in slices).
Finally, ripe fresh figs!!! It is the best summer fruit! Don’t get me started on figs, I’m a bit crazy.
I could drive you insane on how much I love them.
Just take my word for it! Try this super fresh fig salad and you will see for yourselves that it really ROCKS!
I can’t believe I got this excited about a salad…
- 160gr. rinsed and dried mixed salad leaves (lollo rosso, lollo verde, arugula, chicory, lamb’s lettuce)
- 4 fresh figs, quartered
- 50gr. Siglino, thinly sliced
- 130gr. Mastelo cheese, thinly sliced
- ¼ bunch chives, finely chopped
- Extra virgin olive oil
- White balsamic vinegar
Put a frying pan on medium-high heat and sauté the Siglino without adding any oil, until it is nicely browned.
Transfer Siglino to a warm plate.
Drizzle a few drops of olive oil into the pan, add the Mastelo cheese and grill until it is nicely browned.
Transfer Mastelo to a warm plate and keep aside.
Place the salad leaves into a mixing bowl. Top with figs, Siglino, chives and Mastelo cheese.
Sprinkle with salt and pepper.
Drizzle with white balsamic vinegar and olive oil.
Toss carefully with your hands.
Taste and season again if needed.
Transfer to a nice salad bowl or platter and serve immediately.
